Try a beach-front hotel in Naama Bay where there is a long sandy beach and you can wade in as deep as you like and swim.
These beach front hotels are on the flat and you just have to cross a small promenade to get on to the beach.
Hotels right on the seafront include, Ghazala beach hotel, Jolie ville Beach Resort, Hilton Fayrouz, Novotel Beach, Sonesta Beach.
My favourite hotel in Naama Bay is the Hilton Fayrouz (see my profile for a full review).
Many of the hotels in other areas are set on the beach but on a steep hill-side so would be really difficult if you have walking difficulties.
I haven't stayed there, but the Iberotel Palace near the old market is also set on a sand beach and might be suitable for you.
